Pizza

I found this Light-As-Air Pizza Dough recipe from the King Arthur Flour website, and it's a winner. It uses some baking powder as well as yeast, so it doesn't take too long to rise. I just whip up a partial batch of dough and then bake on one of my personal-pizza sized baking stones. I think this pizza has roasted red peppers, caramelized red onion, a few anchovies, and basil.

Roasted Eggplant and Tomato Soup & Rosemary Flatbread

Roasted Eggplant and Tomato Soup from Simply Recipes and Crisp Rosemary Flatbread from Smitten Kitchen.

The soup was really good - I love the combination of tomatoes, eggplant, and chickpeas - but it did create a lot of dishes.

I had some challah left over and decided to whip up some more French toast for a quick breakfast before work. You'll have to trust me that this isn't just another photo from the last time I made French toast. But since I am also my readership, that shouldn't be too hard.

Apple Coffee Cake

Breakfast this morning was an adapted version of this Apple Coffee Cake from Simply Recipes. I made a few changes based on comments on the blog:
- used a smaller pan than the 9-inch square called for, since there were some comments that there wasn't enough cake batter
- used brown sugar, butter, cinnamon, and walnuts for the topping (instead of white sugar and cinnamon)
- used half white whole-wheat flour, because I always try to sub some whole grains when I can


Here's a closeup of that luscious orange, direct from Florida. Boy, was it good.

Valentine's Day Feast - Honey Walnut Bread, Swordfish Kebabs, Baked Apple

This year I fended off any possible Valentine's Day depression with a kick-ass dinner and a Battlestar Galactica mini-marathon.

Appetizer: Freshly Baked Honey-Walnut Wheat bread with Goat Cheese Brie
I just made a half-batch of the speedy no-knead bread, substituting white whole wheat flour for half of the bread flour and adding 1 Tbsp honey and about 1/2 cup chopped walnuts.


The entree was swordfish kebabs, based on a recipe in The Fifteen Minute Single Gourmet, borrowed from the library. Swordfish chunks marinated in a soy sauce/tomato paste/honey mixture, then threaded onto skewers alternating with fresh pineapple chunks, onions, and orange sweet pepper, and broiled to juicy perfection. The main course was rounded out with leftover brown rice and sauteed green beans garnished with pine nuts.


And for the finale - a baked apple from Simply Recipes, served with a scoop of vanilla ice cream.

With a meal like that, who needs a man?
